Week of 1/13/13 Meal Plan

My Meal Plan - Week of 1/13/13


I am just getting started at this, so there is no wonderful format :)  That shall improve over time.  My goal is to meal plan for two weeks at a time.  I actually made up my meal plan last Thursday so it is running for last week and this week so that I have the first two weeks of the month and the last two weeks of the month together.  Hopefully this means less grocery store trips, less eating out, and less money spent.  My advice, make sure to have the recipes handy when you are making your meal plan so that you can also check your ingredients on hand and make your grocery shopping list.

Sunday, January 13

  • Roast with red potatoes and carrots
    • I just take a roast (any kind will be fine) and I put it my crockpot/slowcooker.  I usually put mine in frozen because I forget to set it out the night before.  I used a Knorr Homestyle Stock Beef with two cups of water, a tablespoon of minced garlic, and a few sprinkles of minced onion.  I then put the baby carrots in with chunked baby red potatoes (skin on).  I put the slow cooker on high for 2 hours, and then turned to low for 4 more hours.  I am sure low for 6-8 hours (6 if you are thawed) would bring the same equivalent if you are setting before you go to work.
Monday, January 14
  • Cream Cheese Chicken
    • I discovered this recipe about two years ago on one of my favorite blogs.  I usually throw my boneless skinless chicken breasts in frozen.  Also, I do shred my chicken when it is finished, make rice and mix it all together.  You can find the recipe for Cream Cheese Chicken here (thanks Melissa's Bargains).
  • Green Beans
Tuesday, January 15
  • Baked Tilapia
    • I am going to make a pouch out of foil.  Put the tilapia, a little olive oil, minced garlic, and lemon slices.  Bake at 375 degrees for 20-30 minutes.  This one I will have to remember to thaw!
  • Baby Red Potatoes.
    • On a baking sheet, I am going to lay out chunks of baby red potatoes drizzled in olive oil and sprinkled with minced garlic.
  • Broccoli
    • We actually love the Green Giant Seasoned Steamed Broccoli.  That is what we will be using.  You can find it in the frozen section!
Wednesday, January 16
  • Spaghetti
    • Pretty cut and dry.  I will use 1 lb of ground beef, browned, diced tomatoes and tomato paste to make the sauce.  We also prefer thin spaghetti to regular.
  • Garlic Bread
    • We love Texas Toast!
Thursday, January 17
  • Pork Chops
    • I will take frozen boneless pork loin chops and put 1 packet or 3 tablespoons of dry ranch dressing over them in the crockpot and put on low for about 7 hours.  They should pretty much fall apart when you are trying to take them out.  Money saving tip:  We have a Sams Club membership.  The price in my area is $1.99/lb for a boneless pork loin.  We buy one of these, and then cut into about 1 inch chops.  Then we use the food saver type bags and freeze.  Boneless pork chops run about $3.59/lb here.
  • Mashed Potatoes
    • If I have any of the red potatoes left in the bag I will use those to make my mashed potatoes, if not they will be instant :)

  • There was a great deal on DiGiorno pizza two weeks ago, we have a bunch in the freezer, so I am taking the day off and we will have frozen pizza!
Here is just a quick picture of my roast from yesterday.  It was great!!
